Apple Cider Sauce

1 scant Cup Sugar
2 Tablespoons Cornstarch
½ Teaspoon Pumpkin Pie Spice
2 Cups Apple Cider
2 Teaspoons Lemon Juice
¼ Cup Butter

This sauce is perfect on Bread Pudding, Pancakes or Waffles. We love it on Ice Cream too!

Other Info

Combine Cornstarch and cold Apple Cider, stirring until blended and smooth.
Into a sauce pan place Sugar, and Pumpkin Pie Spice. Stir in the Apple Cider mixture. Place over medium heat, stirring occasionally, until mixture begins to thicken and bubble. Turn heat down once you see the bubbles as sauce is hot! Stir in lemon juice and add butter, stirring as it melts.

Almond Cake 1-2-1

(notice the rhythm of ingredients)

1 Cup Butter
1 Cup Cold water
2 Cups Flour
2 Cups Sugar
2 eggs, whisked together
½ Cup Sour Cream or Plain Yogurt
1 Teaspoon Salt
1 Teaspoon Baking Powder
1 Teaspoon Almond Extract
¼ Teaspoon Baking Soda

Frosting Ingredients:

¼ Cup Milk
½ Cup Butter
5 Cups Confectioner Sugar
½ Teaspoon Almond Extract
1 Cup Chopped Almonds or Walnuts

This is such a versatile cake, made different by adding different extracts and complimenting the flavor in the icing.

Other Info

In a large mixing bowl stir together Flour, Sugar, Eggs, Sour Cream or Yogurt, Salt, Baking Powder, Almond Extract and Baking Soda just until barely combined.

In a saucepan heat water and butter just to the boil. Remove from heat and pour into your mixing bowl of ingredients. Stir together until well combined and just smooth.

Pour this into a greased 10 x 15 x 1 sheet pan. Place into preheat oven and bake at 375* for about 20 minutes until center tests clean and top is golden. Remove and allow to cool slightly in pan.

In a very large saucepan heat Milk and Butter until butter melts and mixture begins to boil. Remove from heat and add Confectioners Sugar and Extract. Icing will firm as it begins to cool, so working quickly, spread over slightly cooled cake. Place or sprinkle with nuts. Cool completely before serving.
