Manor House Breakfast Bread Pudding with Apple Cider Sauce
Ingredients:
4 Eggs
¾ Cup Sugar
3 Cups Milk
1 Cup Half and Half
½ Cup Melted Butter
1 Tablespoon Vanilla
¾ Cup Raisins
2 Medium Apples, peeled and thinly sliced
1 Teaspoon Nutmeg
1 loaf of day old bread cut into cubes

Add the Apples, Raisins and Nutmeg and continue to stir until well blended.
Add the bread cubes to the fruit and liquid and gently combine then allow the mixture to sit for ½ hour, allowing the bread to soak up the liquid.
PREHEAT the oven to 350*. Grease a 9 X 12 glass baking pan.
Once the bread mixture has absorbed the liquid pour the bread mixture into your prepared pan.
Place pan onto a rimmed sheet and place into preheated oven.
Bake at 350* for 45 – 60 minutes.
Cool slightly and serve with Apple Cider Sauce or Maine Maple Syrup.
Apple Cider Sauce
Ingredients:
1 scant Cup Sugar
2 Tablespoons Cornstarch
½ Teaspoon Pumpkin Pie Spice
2 Cups Apple Cider
2 Teaspoons Lemon Juice
¼ Cup Butter

Into a sauce pan place Sugar, and Pumpkin Pie Spice. Stir in the Apple Cider mixture. Place over medium heat, stirring occasionally, until mixture begins to thicken and bubble. Turn heat down once you see the bubbles as sauce is hot! Stir in lemon juice and add butter, stirring as it melts.

Almond Cake 1-2-1
(notice the rhythm of ingredients)
Ingredients:
1 Cup Butter
1 Cup Cold water
2 Cups Flour
2 Cups Sugar
2 eggs, whisked together
½ Cup Sour Cream or Plain Yogurt
1 Teaspoon Salt
1 Teaspoon Baking Powder
1 Teaspoon Almond Extract
¼ Teaspoon Baking Soda
PREHEAT OVEN To 375*
Frosting Ingredients:
¼ Cup Milk
½ Cup Butter
5 Cups Confectioner Sugar
½ Teaspoon Almond Extract
1 Cup Chopped Almonds or Walnuts

In a saucepan heat water and butter just to the boil. Remove from heat and pour into your mixing bowl of ingredients. Stir together until well combined and just smooth.
Pour this into a greased 10 x 15 x 1 sheet pan. Place into preheat oven and bake at 375* for about 20 minutes until center tests clean and top is golden. Remove and allow to cool slightly in pan.
In a very large saucepan heat Milk and Butter until butter melts and mixture begins to boil. Remove from heat and add Confectioners Sugar and Extract. Icing will firm as it begins to cool, so working quickly, spread over slightly cooled cake. Place or sprinkle with nuts. Cool completely before serving.
